The fast paced life that we are living… leaves us with no time for family , not even for ourselves. We are constantly on the run, hence opt for fast foods and even feel guilty about it.

I am sure all of us are in search for quick, easy and nutritious…. yet tasty dishes . Today I am sharing my Nutri Bowl 😉 (recipe) with you all… Quinoa Chicken Stir Fry.

Quinoa is neither a cereal nor a grain… but a seed. It is rich in protein, antioxidants, fibre and minerals like manganese, copper, folate, magnesium and phosphorus. It is gluten free , making it suitable for those having Celiac disease or Gluten Intolerance .

After a busy day at work…I got home and prepared this for Sam and Mom …. they loved it 😃 and that, is my approval of getting this dish right ..

Quinoa Chicken Stir Fry

Below are the ingredients you would require to make this dish….

Quinoa- 30 gms
Chicken – 100 gms (Vegetarians can opt for Paneer ( Cottage Cheese)
Broccoli- 50gms
Red Bell pepper- 1/2
Soya sauce- 1 1/2 tbsp
Vinegar – 1Tbsp
Garlic pods- 5-6 pods
Oil- 1Tbsp
Peanuts – 1 tsp

In a vessel add Quinoa and add double the amount of water. To this add 2 pods of crushed garlic ( if you don’t like the taste of garlic you can skip it).Once cooked keep it aside.

Heat Oil in a wok . Add the Chicken ( cut it in thin strips, so it cooks faster). Now add sliced garlic . Give it a good stir .

Add Broccoli and Red bell peppers . To this add soya sauce and vinegar. Cook for 2 mins (make sure the veggies are soft but has a crunch to it )

Add the Quinoa. Give everything a good mix. Grind the peanuts roughly and sprinkle them on top.
